In Australia baked pumpkin was what you had with your Sunday dinner. We now have 4 boxes of diced pumpkin in the freezer ready for my daughter-in- law to make pumpkin pie when she has a spare day. But most pumpkins go to waste in the once a year pumpkin fest.
i roast it with red onion and garlic with plenty of mexican spice and then throw it on pizza dough, with feta cheese and herbs. It’s tasty, even the staunch meat eaters in our house will enjoy it

I wonder how many people here ever actually eat a pumpkin? I have had it as soup, but never served any other way.
